What's your ethnic take on a Thanksgiving meal?

Turkey isn't the staple bird on some Thanksgiving tables, or sometimes it's served big with an ethnic twist. Here in Houston, with one of the most diverse immigrant communities in the country, we're wondering what are some ethnic twists to a traditional Thanksgiving meal?

We've talked to people before who've made turkey with green tomatillo marinade or made a tandoori turkey. Some opt out and go for a Cantonese duck or ham instead. Do you saute chorizo with brussels sprouts? Do you make a killer cranberry chutney that's better than NPR's Susan Stamberg's recipe?

We want to know how Thanksgiving's evolved in your household, and what's your ethnic take on a 'traditional' Thanksgiving meal.
